700 grams of tuna
1 tablespoon red chili powder

- To make the escabeche de pescado, first wash the tuna well and cut it into small, square pieces. If you wish, you can bring the fish from the market after washing it well. Put all the fish pieces in a large bowl. Now we will marinate it.
- To marinate the fish, add 1 tablespoon red chili powder, 1/2 teaspoon turmeric powder, salt to taste, and 3 teaspoons vinegar to the fish pieces and mix well. Remember, water should not be used in this at all. Mix the mixture well so that the masala mixes well with the fish pieces.
- To make the marinade, after marinating the fish, cover it and store it in the fridge for about 3 days. Take out the fish tank after 2 days.
- Now put a frying pan on the fire and heat it by adding 3 tablespoons of sesame oil. When the oil is hot, add the pieces of marinated fish and fry them. When well toasted, turn off the gas and take out the pieces on a plate.
- After frying the fish, reheat the remaining oil in the pan and add 2 tablespoons of mustard seeds to it and sizzle, then add 1 tablespoon of fenugreek seeds, 5-6 curry leaves and 40 grams of finely chopped ginger. After this, finely chop the garlic and add it.
- Now fry this spice mixture well. After 1-2 minutes, add 2 tablespoons of red chili powder and half a teaspoon of turmeric powder and mix. When mixed well, add 1 tablespoon of vinegar.
- When the masala is roasted, add the fried fish pieces to it. Cook for 1-2 minutes and then turn off the gas. Your fish marinade is ready. Scoop into a bowl and cool, then store in an airtight container.
